Shadowbrook Farms + Dutch Girl Creamery
Journey just a few miles north of Lincoln, NE and you’ll find Shadowbrook Farms. They focus on raising organic vegetables, pork, and a wide range of herbs and flowers. They are also home to Dutch Girl Creamery, which crafts award-winning traditional cheeses.
The family of diversified farming operations is owned and operated by husband and wife team Charuth Van Beuzekom and Kevin Loth, as well as farmer Ian Richmond. Charuth grew up in the Netherlands and spent a lot of time on her grandfather’s property in the Dutch countryside. He had a large garden and a green house, so they would spend a lot of time working in the garden together. They would often visit the neighbor next door that was a cheesemaker and she used to joke with her grandfather that she wanted to be a farmer when she grew up. She moved to the United States with her mother when she was six years old and always lived in rural settings. When she was nine, she got her first goat and named her Rosemary.
All of these experiences inspired her to explore the bucolic lifestyle when she grew older.
Dutch Girl Creamery cheese is made in small batches, stirred and ladled by hand, melding science and art. Many of the cheeses they make are molded from old-world, traditional styles. Environmental factors specific to our region, and the recipes they have developed intertwine to produce cheeses that are true Nebraska originals.
At Ted & Wally’s, we use their products for a variety of our ice cream flavors and love getting creative with their delicious cheeses and goat’s milk. A couple of our favorites are Cinnamon Cardamom Goat Milk and Goat Milk Blackberry. We also love their pasteurized goat’s milk and use it all the time.
